Ingredients:
Beets, any color, and quantity
Oil for frying
Salt to taste
Directions:
1. Slice beets into thin slices, preferably using a mandolin.
2. Fry slices in 150 degree oil until soggy. Remove from oil onto paper towel to drain.
3. Heat oil up to 395 degrees.
4. Return beet slices to frying oil and fry until crisp.
5. Remove from oil onto paper towel. Sprinkle with salt and serve.
