Ingredients:
1-1/2 cups garlic scapes, rough chopped
1/2 cup nuts of your choice (sunflower seeds work too)
1/2 cup olive oil
1/2 cup parmesan cheese
1/2 tsp lemon or lime juice
Salt and pepper to taste
Directions:
1. In a food processor, process the garlic scapes for about 30 seconds.
2. Add nuts and process for another 30 seconds.
3. Slowly drizzle in olive oil and you continue to process.
4. Add cheese, lemon juice, and salt and pepper. Process to final desired texture.
5. Store pesto in a sealed container in the fridge until needed.
