Ingredients:
2 patty pan squash, softball sized
Filling
1 tbsp granulated sugar
1/2 tbsp flour
Dash of cinnamon and nutmeg
Topping
1 tbsp butter, softened
2 tbsp flour
2 tbsp brown sugar
Directions:
1. Cut patty pan squash horizontally to make a pie shell shape. Scoop out seeds.
2. Use a spoon to hollow out the "pie" shell and then dice up the squash flesh into 1/2" or smaller pieces.
3. Combine the Filling ingredients in a bowl. Toss with squash pieces.
4. Combine topping ingredients to make a streusel topping.
5. Put filling into pie shells and top with streusel.
6. Bake in oven at 350° for 20 minutes. For added browning of streusel topping, broil for a few extra minutes.
